A Typical Day - what I eat

So I am constantly tweaking my diet, adding and subtracting foods that seem to cause me issue or that I respond well to. I certainly do not have things figured out yet (but I'm working on it), so I just want to add that as a disclaimer. When I've eaten something that has caused a digestive issue, I often will go on the SCD intro diet for a day or two to "reset" things and try to correct whatever mistake I made. So things are in constant ebb and flow. 

That said, here is a sample menu of what I eat on a day to day basis. I eat about 4-6 meal/snacks per day. I guess you could say I eat like a hobbit. I really try to get in more than 2,000 calories per day. I really try. My appetite's not that good, but I'm working on it. Anyway, here a little bit of what I eat:

7:30 am - wake up in the morning, and before I start my treatments I drink a big mug of chicory tea with hemp milk, a tablespoon of coconut oil, and a teaspoon of raw honey. = about 225 calories

9:30 am - breakfast may be something like a granny smith apple with a lot of sunflower seed butter. = about 365 calories. I take my morning pills and supplements (mostly fat-soluble) with this meal. 

11 am - snack is a "cherry pie" larabar. = 200 calories

1 pm - lunch is two pork sausages from the farmer's market, rolled up in lettuce with a few slices of tomato and a side of stone-ground mustard (or my homemade ketchup). = about 350 calories. I take iron, zinc, and magnesium with this meal, since I have to space them away from the minocyline and bactrim (morning and night) when I'm on them. It's good habit to split up the vits this way anyway, so the system is not overloaded with lots of different nutrients to absorb all at once (good to split up the fat-soluble and the water-soluble vits). 

4:00 pm - a chocolate macadamia nut smoothie (mac nuts, lettuce, spirulina, hemp milk, banana, cocoa powder, honey). = about 650 calories

6:30 pm - veggie stir-fry fried in bacon fat with a couple strips of bacon on the side. = about 380 calories. Evening supplements with this meal (fat-soluble). 

The total calorie count for this day would be 2170. Not bad. I could certainly use more, and I'm trying to come up with schemes to boost my appetite so I can shove more food in. If you have any tips, send them my way!
