Recipe: Paleo Waffles

You won't believe how delicious these waffles are until you try them. I haven't had waffles in years, and now I realize how much I've been missing. Why is it that the waffley shape makes things taste so good? Actually, I had to stop myself from eating all of the batter before I put it in the iron, so it's not just the shape that makes these things absurdly delicious. This recipe I found on Nom Nom Paleo, but I modified it to cut out the eggs (I don't digest eggs well) and replaced them with flax seeds, which worked SO much better. I digest these babies quickly and completely with no G.I. issues whatsoever. Plus flax seeds are a much better food combo in this recipe; the eggs threw in too much protein, and that's probably why I could digest very well the first batch of these waffles I made.

These are super calorie-dense waffles - plus I do 'em up with coconut oil, sunflower seed butter, and all-fruit jam or apple butter when they're fresh out of the iron. Two waffles on their own equals 675 calories, 49 g of fat, 20 g of protein, and 45 g of carbs. Add the fixings like I do, and you've got a 990 calorie meal! Who says you need grains to have a high-calorie diet? Ha!

The best thing about these waffles is that you can make a bunch and freeze them for a quick toaster breakfast (or snack anytime). These waffles are my only "bready" food, so I use them as a vehicle for "PB&J" (really SB&J). 

Missing a waffle iron? Put out the good juju then check your local garage sale. I scored mine for $2! The Universe provides! 


Paleo Waffles
Makes 5 waffles. 

1 large banana
1 medium/large granny smith apple (less sugar than other apples)
1 cup of sunflower seed butter (or other nut butter)
2 tablespoons of ground flax seeds + 4 tablespoons of water (= egg replacement)
1 Tbsp coconut flour
1 Tbsp vanilla extract
1/2 tsp baking soda
2 tsp spirulina (optional, for extra nutrition plus a rad green color!)

1) Combine your banana, apple, and sunbutter in a food processor. 
2) Mix the flax seed meal with the water and let it sit for a few minutes to get gelatinous. 
3) Add the flax mix and the rest of the ingredients to the food processor and blend up until very smooth. 
4) Get your iron hot and then brush on some coconut oil to prevent the batter from sticking to the iron. Do this on both sides of the iron. 
5) Plop in a dollop of batter and fry for 4-6 minutes until it's browned and no longer doughy. Make sure you don't put in too much batter or it will leak out the sides of the iron. 
6) Remove the waffles with a wooden chopstick if they're not coming out of the iron perfectly. 
7) Brush on more oil in between batches of waffles. 
8) When you're all done and ready to eat them, lather them with your favorite topping, take your enzymes and supplements, and enjoy!
